Hemp NZ Savoury vegetable muffins

Healthy, delightful and full of an added Hemp protein punch, these muffins are nutritious and delicious!

Great for lunchboxes and they freeze really well too!

Recipe - Makes 12 or 24 mini

Dry Ingredients

  • ½ cup Hemp NZ Hemp hearts

  • 310g Grated zucchini

  • 210g Grated carrot

  • 30g Frozen corn

  • 125g Grated cheddar cheese

  • 250g Whole wheat flour

  • 3tsp Baking powder

  • 1tsp Dried herbs (thyme/basil/parsley)

  • 3/4tsp Sea salt

Wet Ingredients

  • 125g Organic whole milk

  • 70g Full fat Greek yoghurt

  • 60g Cold pressed olive oil

  • 1tsp Dijon mustard

  • 2 Free range eggs

Method

1.      Preheat oven to 170 degrees. Measure vegetables then squeeze grated zucchini and carrot to remove excess juice.  Add corn and cheese to the bowl and mix together.

2.      Mix hemp hearts along with the rest of the dry ingredients and stir through the vegetables.

3.      In separate bowl, mix wet ingredients, then add to dry.

4.      Do not overmix!

5.      Fan bake for 27-30 minutes until golden brown. Enjoy! xx
