caramelised onion, feta & Spinach muffins

These muffins are not only moreish, full of flavour and great for lunchboxes…

They are a delicious to have with coffee on a lazy weekend and they also freeze well!

Recipe - Makes 12 or 24 mini

Dry Ingredients

180 grams Caramelised Onion

60 grams Feta (crumbled)

30 grams Baby Spinach (roughly chopped)

125 grams Cheddar Cheese (grated)

260 grams Whole Wheat Flour

15 grams Baking Powder

1 tsp Salt

1 tsp Thyme (dried)

Wet Ingredients

250 grams Whole Milk

70 grams Greek Yoghurt

60 grams Cold Pressed Olive Oil

2 Free Range Eggs

Method

  1. Preheat oven to 170 degrees.

  2. Mix dry ingredients in a large bowl.

  3. In a separate bowl, mix wet ingredients. Add this to the dry ingredients and mix gently. Make sure you don’t overmix!

  4. Fan bake for 23-28 minutes. Enjoy! xx
