I used to own a baking business called mighty morsels. I created healthy lunchbox snacks for children which were nut free and free from preservatives and artificial ingredients. These protein balls were a hit with the kids and they are so easy to make. simply press them into a slice pan and slice up when you are short on time and don’t want to faff around rolling the mix into balls. Nutrient packed power bites with natural sweetness, and so nutrient dense providing perks for vitality and well-being! these are the perfect treat to incorporate into your children’s lunchboxes or as a quick snack to curb those days you feel like something a little sweet!

INGREDIENTS

  • 1 cup Pitted medjool dates

  • 1 cup Organic raisins

  • ½ cup Sunflower seeds

  • ½ cup Pumpkin seeds

  • ¼ cup Hemp seeds

  • ¼ cup Organic cacao powder

  • ¼ cup Desiccated coconut

  • 1tsp Vanilla extract

  • 2 tsp Chia seeds

  • Water to bind

  • Desiccated coconut & dark chocolate to decorate (optional)

METHOD

1.       Place all ingredients into a high-speed blender.

2.       Add water as needed to create a mixture that just binds together.  Add just 1 tablespoon at a time.

3.       Scrape down the sides and blend until the mixture comes together.

4.       Using damp hands, take small amounts of mixture and roll into balls.  Either leave as is or you can roll them in dessicated coconut or drizzle with dark chocolate for extra decadence.

5.       Store in the freezer for up to 2 months or in fridge for up to 2 weeks (if they last that long).

Tip: When I am short on time and don’t have time to roll the mix into balls, I double batch the recipe and squish the mixture into a sheet pan.  Place the pan into the fridge for 2 hours to set, then remove from fridge, cut into squares and then pop into a container to store.  This short cut saves a lot of time!
