I really don’t like the thought of people having to miss out on enjoying certain food groups because of food sensitivities and digestive issues. That is why I’ve created This is delicious dairy free ricotta that is high in protein, nut free, low in calories and contains good fat, b vitamins along with other vitamins and minerals.
You have to try this! It is so moreish and easy to prepare…you literally only need 5 minutes!
dairy free ricotta
INGREDIENTS
400 grams Organic firm tofu
1-2 Garlic cloves
1/4 tsp Sea salt
1/4 tsp Pepper
Small handful of basil & italian parsley
2T Cold pressed olive oil
3 tsp Nutritional yeast (this gives the cheesy flavour)
METHOD
1. Place all ingredients in a food processer and pulse until combined.
2. Adjust the seasonings to suit your palate and blend again until you get a smooth consistency but still maintaining some texture.
NOTE: You can choose to use other herbs if you wish! Enjoy this on toasted organic sourdough with mushrooms, slow roasted tomatoes and basil or just on its on with vegetable sticks or on a platter.
This ricotta is also great to use just as you would normal ricotta. Great in lasagnas or mixed with tomato based pasta sauces.
